Only for the startpage it is important to either user the URL-segment
"home" or to enter gd.libreoffice.org domain into the corresponding
text-entry box "use as homepage for domain" (otherwise you would get a
404 when visiting http://gd.libreoffice.org )
I don't understand that.

Look at your homepage now, tab Metadata: the name of your homepage is
'an-duilleag-mhor' not 'home' so your URL has to be inserted at the
Behaviour tab (I did it) like Christian described above.

Btw page-type of this page has to be widget-page to display the proper
layout, also set at the Behaviour tab.
Watch to tick the 'full width' box (Main tab) on all your pages where
you need the content all over the page.

But I have a bigger problem just now - I've
gone to the English page and grabbed the html and pasted that (only took
me 20 mins to spot the HTML button... nice colour but hard to read.

When I preview the site it looks like I get a "site within a site". I've
tried judiciously deleting the bits from the html (like the disclaimer)
to stop it appearing twice but not much luck, it buggers up the whole
thing. What am I not getting, any ideas?

:-) you still copied to much code, I cleaned out head and footer,
changed the page-type and it looks proper now.

for one a few not-obvious-at-first sight uses (that are still not used
very much unfortunately, I wish people would make the pages more
"lively" and less "wall-of-text" like...) ciao
Perhaps because the people who are good at translating might struggle
with the process? ;) I'm good at translating but so far the process
somewhat perplexing and a far cry from the ease of using Pootle for the
LO UI.

Well a harsh comparison ;-) you're up to setup a website here.

You now have access to the main site too and may login there to copy
just the code the HTML button offers to paste it onto your pages.
Save the code in textfiles and make a note from which 'page-type' it
comes to remember the proper settings when you login at gd again to paste.
This might diminish perplexity in process. :-)

Cheers
Erich
