Theme Tango includes a lot of Theme Industry's icons (Gnome-1), which have a
gray color. Project Tango no has many icons, which are needed for
LibreOffice.
Right, this point from Ape might apply and hit you quite hard. It
would be a good idea to check which separate folder icons are
necessary before replacing just some of them. LibreOffice might
actually have too many folder icons that Tango "official" can't cover.
Theme Galaxy is better do not use, because the main size of
large icons 26 by 26 pixels. Tango (GnomeDE, LXDE) requires that the icon
had a big size 22 by 22 pixel, transparent border around it (one pixel),
The 24*24px icons in Gnome are, AFAICT only there to ensure
compatibility with older Gnome 2 apps. In early Gnome 2, the official
Industrial theme used 24*24px. The Tango theme that replaced it 2.16
started using 22*22px icons.
