Have you tried to select the cell by itself before trying to change
its color? Changing the color of one cell is sometimes a bit tricky.
First, position your cursor in the cell and do Table > Select > Cell,
followed by Table > Properties > Background. From there you should be
able to select the color.
This phenomena has prompted me to speculate that some sort of
highlighting has inadvertently been applied to the text, but if my
speculation is correct, I have not been able to change or disable
highlighting for that text.
Note that I am using LO 7.2 on Fedora downloaded from the LO site. I
seem to remember some past issues with table formatting in previous
versions but I am not sure if it dealt with text or table formatting.
