I'm using LibreOffice 5.1.3 (a bit old now) on Windows Vista. After
selecting a source, nothing happens for me; probably something broken
in my setup. However, the "Select Source" dialog looks identical to
one used in GIMP, which does work and opens an external application to
operate the scanner (either "Windows Image Acquisition" wizard or an
application from the scanner manufacturer, depending which "source" I
select).
Assuming it's similar on Linux, I'd guess that the actual dialog where
you select the scan mode is some other application not directly under
LibreOffice's control which defaults to a particular set of options.
You may need to figure out what that application is (maybe XSane?),
and see if it has any options for saving presets etc. If it's opening
a separate application, that may also account for the delay opening
the scanner options, which you previously mentioned.
Sorry I can't be much more help; perhaps someone else using Linux
might be able to confirm some of the details.
