It's possible that you accidentally somehow turned bold on and off once when creating the custom
styles. I might try looking for a Bold command in the template by (1) using the AltSearch extension
(https://extensions.libreoffice.org/en/extensions/show/70066); or (2) using Save As to save the
template in the Flat XML ODF Text Document (.fodt) format and examining the result with a text
editor.

Admittedly THAT is a possibility, but then again, I have been typing for

Text turns bold AFTER I have typed a line or two, but did not select any
text.
When I hit return to move the next line, the bold disappears (if I am
lucky). Again without selecting anything.
I somehow doubt, this behavior can be due to me hitting ctrl+b all the time.
I just tried to use other templates to open a new document and entered
random characters.
This does NOT seem to happen with templates I created a long time ago.
