I have never used W11, but on W10 it's easy, at least with Open-Shell, which provides a normal Start menu, instead of those d*mn tiles.  Under All Programs there's a folder for LibreOffice. In there, are icons for the various LibreOffice apps.  Just make a shortcut or add to the task bar, as desired.
