You are presumably using Format | Cells... (or right-click | Format Cells...) | Alignment | Properties | Wrap text automatically. You can use that for a range of cells by selecting them simultaneously first. By clicking the rectangle at top left, where the row and column headers meet, you can even select an entire sheet at a time.

Note that wrapping is also a property of cell styles, so you may wish to make any such change there - perhaps to the Default cell style. Such changes could propagate to multiple sheets.
