When you open an Open Document and don't have the fonts used in the document they will be replaced by a similar font. Therefore when you create the PDF in a computer that doesn't have all the original fonts, the fonts embedded are the replacement fonts. This means that the PDF font list will show the fonts currently used but not the name
of the original ones.

Oh, indeed. I assumed that you were talking about the situation where you were the author of the document and wanted to be able to specify to a recipient exactly what fonts s/he would need.
