Those sites that ask you to enter/create security details aren't hosted
by the vendor you're trying to purchase an item from.  Rather, they are
hosted by one of the credit agencies, such as SagePay, WorldPay, etc.
Once you've set up security details with SagePay (for example) that's
it, job done.  After that, you don't _usually_ have to enter a password,
or subset thereof when encountering the same payment system.

Of course, it's entirely your choice how you wish to limit your online
footprint.
