But now I want to modify the file, and have changes highlighted such
as deletions to get a strikethrough and insertions to get a different
color. What do I need to do to make it do that? The documentation is
no help.

Hi. When you open a document from an email it is opened read only so as
not to corrupt the mail sent to you. You can click the pencil looking
icon (to the left of the pdf icon) in the tool bar to convert to a new
editable copy of the document.
In the tool bar click Edit>Changes and tick record and show.
