Seems like I guessed wrong twice. The problem that you have has to do with adding a field that is NOT NULL. When you add a field to a table, it has no values until entries are made. So, selecting "Yes" for Entry Required causes the error. Create the field with "NO" selected for "Entry Required." Enter the appropriate data making sure all the rows of the table have an entry for it. Now edit the table by setting "Entry Required" to Yes.
