The java version often seems to be the culprit in slow-downs like this, judging from responses on 
this list.  Try 

LibreOffice - Preferences - Java

Hopefully you will see a list of different versions of java.  The best one for the 3.5.x branch is 
the 1.7.  I'm not sure about 2nd best.  For earlier versions of LibreOffice and probably for all 
OpenOffice's the 1.6u21 seemed to be best with u20 and u22 being 2nd best.  

I don't think java 1.7 has been officially released yet but hopefully you can get an early 
pre-release version from
http://www.java.com

It would probably be a good idea to get rid of earlier versions of java to prevent future 
slow-downs but i think you have to find the java configuration tool in your system utilities.

An indication of the specs of your machine might help us, as well as the
version of Java you have installed.

Also the folder where you installed the LibreOffice.app package
(although this shouldn't really make a difference, unless you are
running it from a network folder) ?
