I have not merged files in MS since word 6 for DOS, so things may have changed since then. I take it you have 2 .doc files, one is the label layout, is the other a comma separated list of the information to put on the labels?.
How many labels per page.

I merge performance data (serial number, specifications, test data) from a spread sheet into a writer document to print certificates using writer. I have different fonts, formatting and sizes of print. Is this what you are hoping to do with your labels.

Tentatively, you should just be able to change the fields in your doc
file so that LO recognises them as mailmerge fields (I don't think
it'll automatically  recognise them).

This does depend on the details of how you're doing what you're doing
