When you double click a field in Writer you have 2 options:
1) From database
2) User defined where you can apply any number format for the individual
field.

You have chosen the first option which is a good method to set a default
format for various use cases. But you can apply any other number format for
the individual fields independently.
In Calc you can also specify if you want to format the imported database
values in the spreadsheet or if the number format should be taken from the
database.
