is there any automatic tool/script to generate the .debs from the sources?
it depends on what you mean with "the .debs"... there are LO upstream
debs which are generated via a patched EPM in instsetoo_native module
from package descriptions in scp2 module and using a make_installer
program that is somewhere in solenv/bin/modules.
... but for "real" distro provided .debs it's totally different, see
Bjoern's answer.
For Ubuntu, see https://wiki.ubuntu.com/BuildingLibreOffice on that topic.
In the source where is located the code of the ui?
unfortunately pretty much everywhere. you need to ask a more specific
question :)
