Just use --disable-odk and let those who actually create the LO SDK

LO SDK platform-independent?) worry about building it (i.e. "odk").

My understanding was that the ODK was necessary for building extensions,
like the MySQL native connector extension, which is precisely what I'm
trying to build.

Just to clarify: The SDK (build off module odk) is needed when you want to develop extensions etc. outside the LO build environment. It is not needed for building the MySQL connector extension during a LO build (configured with --enable-ext-mysql-connector).
