I have some suggestions on more self-educative work, if I may, rather than helping with something concrete:

1. Obligatory pitch due to being an RTL language guy: Our languages, as well as CJK languages, have many particular issues with LO, which are usually due to original software developers or UI designers not having taken these languages (or quirks thereof) into consideration when working on some feature or piece of UI. I recommend that you check out a few presentations at LO conferences about this. Specifically, the two from this year's LibOCon:

2. Look for some UI/UX bugs which have seen spirited/intense debates, where the debates were not merely splitting hairs but about conflicting expectations and considerations. There bug pages are tedious to read through but also informative in learning how people often don't simply disagree, but have different visions, motivating principles or considerations underlying their positions on UI/UX choices; and how as a project officer you can help by making the different considerations more explicit and clear to everyone when discussions are had.

3. Trivial, but still worth suggesting: Take some time to try out LO modules which you use less frequently in your daily life, and features within those modules you use less frequently. In LO, Writer gets most of the attention, then Impress and Calc, and all the rest sometimes feel like an afterthought w.r.t. QA work. Even true for me personally, I'm afraid.
