I just added the strikethrough icon to the formatting part of my menu just
to see if it works. Would it be possible to make an icon which looks more
like the bold, italic, and underline icons? Just for consistency.

Yes, the icon is there. View > Toolbars > Customize..., then click
Add..., choose Format from the list on the left, choose Strikethrough
in the list on the right, click Add. That's maybe not as easy as it
could be, but it exists.
