Das ist in Format > Spacing > Category Symbols. "minimum spacing" scheint irgendwie nicht zu funktionieren, aber "primary height" sollte dir helfen. Probiere mal 5%.

2. die Strichdicke zu variieren?

Nein. Diese Striche werden aus dem Font genommen. Vielleicht probierst du statt "Liberation Serif" mal einen anderen Font? Die Font-Auswahl ist in Format > Fonts > Modify.
