Published on June 18, there appear to be several chapters of a book for LibreOffice 4.2 done by Jean Webber like this example: https://wiki.documentfoundation.org/File:WG4208-WorkingWithImages.pdf

These documents may be a good basis (or complete version) for teachers.

In the IRC chat, I also mentioned my own guide which was more designed for a Senior Center audience, but can be expanded and modified/expanded to suit a teacher or student crowd. http://runeman.org/intro-ubuntu/
