Olá Carlos Pelo menos em Windows 8.1 eu sei que instala e corre sem problemas, eu memso já experimentei. Agora em modo touch, vai depender da resolução/sensibilidade do seu tablet. A interface ainda não está optimizada para touch, logo terá de ter algum cuidado. No entanto não sei se sabe mas as versões mais recentes do LibreOffice já permitem escolher o tamanho e o estilo do ícones em "Ferramentas > Opções > LibreOffice > Ver > Tamanho e estilo dos ícones:". O modo "Grande" deve-o ajudar a "tocar" mais facilmente nos ícones.
