puoi provare con il tasto destro del mouse sul file e dovrebbe darti le varie possibilità: altrimenti apri un terminale e scrivi "pdftotext". io uso debian xfce, potrebbe esserci qualche differenza, ma credo che sia minima.

Avevo proprio ora provato, da terminale: e questa è la risposta, che però mi chiedo come rendere operativa.

  -layout              : maintain original physical layout
  -fixed <fp>          : assume fixed-pitch (or tabular) text
  -raw                 : keep strings in content stream order
  -htmlmeta            : generate a simple HTML file, including the meta information
  -enc <string>        : output text encoding name
  -listenc             : list available encodings
  -eol <string>        : output end-of-line convention (unix, dos, or mac)
  -nopgbrk             : don't insert page breaks between pages
