No - at least not that way. But within the CMS, you can expand the
"Versions" taskpane on the left, below the sitetree and choose to
compare two versions.

While this won't give you a source-diff, it will show you difference
in content, which probably is more useful anyway.

I created a snapshot of fr.test.libreoffice.org for offline use:

So I see that making a snapshot is possible, and this is already quite
good; I would just like to know whether there is a way (it doesn't have
to be graphical) to track individual changes to the pages, like
http://it.openoffice.org/source/browse/it/www/download/3.2.1/download321.html?r1=1.11&r2=1.12

No - such a view doesn't exist currently. (It would be possible to
implement it though). But before I'll look into this, the other parts
of the site should be ready :-)
