Entry was removed on purpose.
Which purpose, where's it explained?
I can't say if it's justified or maybe opposite was better, to have both View -
 Hidden - Fields Paragraphs and View -  Hidden - Fields Text and even View - 
Hidden - Text as mentioned in Bug 107658. There's enough space in View menu for
that single entry. 
Or icons are enough, like requested in Bug 107722. Those who use this more
should tell. 
At least this was done too hasty, without changing documentation.

This setting can be changed in Tools > Options > LibreOffice Writer > Formatting Aids.
I don't like how "Display of" look like, all is there. 
There should be separate group that is toggled via Formatting Marks icon on the
Standard bar ("Formatting Marks Toggle") and separate group that is not
("Display of").
