So lets make it a bug for Calc with the intention to harmonize the workflow.
The context menu should receive a menu entry, EASYHACK. But I'm afraid that
undo for every single edit step is not so simple (have read some similar
reports in Draw about table cells).
The URL recognition can be disabled in Calc similar to other apps. Off by
default means to hide an important feature from the user. Rather add a menu
entry "Edit hyperlink settings" in the context menu, which helps to find the
option quickly. Or have direct access to "[x] Recognize URLs" or "[x] Auto
correct URLs" in the menu (shown only when opened at a hyperlink).
