You can change the key binding in the customization dialog (tools > customize).
Switch to tab Keyboard, select Format from Category, select Increase
Font/Reduce Font in Function, choose the Shortcut in the upper list and apply
with Modify.
Unfortunately there is no key combination with ctrl+</> available. But I
wouldn't use it anyway since less-then on a German keyboard means to press
shift+ctrl+>... and I'd have to unknot my fingers afterwards.
