You have written to the LibreOffice users' list asking instead about
OpenOffice - but the answer is probably very similar for both, in fact.
You can toggle the recording of changes in a text document at Edit |
Changes > | Record. You can similarly toggle the display of recorded
changes at Edit | Changes > | Show. This display, as far as
insertions and deletions are concerned, is very similar to the
displays of tracked changes you describe in Microsoft Word. (I'm not
sure what sort of filter you are trying to avoid, in fact.)
