As Brian Points out, the problem is about a Table column in Writer.
You are correct: I discovered that the problem doesn't happen width the
third "path" of doing things: click and drag. That's weird, because I
would expect different ways of doing the same thing to behave in the
same way. And actually the problem is still there, as click-and-drag is
somewhat inaccurate (it's what I call "just for mocking up the design")
but I'd need precise measures for the table columns (lets say, not only
in this particular example document but in the general case, should this
problem arise again).
By the way, I actually deleted the first row of the column, which had
this small "third" column which could be the cause for the problem, but
it turns out it wasn't: the problem is still there, nothing changed.
After deleting the first row, we have one clean and clear column in the
left side of the table, which cannot be resized by means of any option
menu. That's weird.

The first step in each is probably the problem. Try clicking outside the table or into a cell that doesn't border on where you are making the change and then drag the boundary.

Summary: when changing the column's width in a given ODT document, only one cell is adjusted, not
the whole column.

Steps to reproduce:
1) Download either of these documents:

http://europass.cedefop.europa.eu/es/documents/curriculum-vitae/templates-instructions/templates/odt.odt
(it is the Europass template Curriculum Vitae, english or spanish)
Then follow ONE of these paths A or B:
A) Right click in any cell of the first column (eg. right click over "Telephone(s)").
Contextual menu> "Column"> "Width..."> Set some width (eg. some smaller value).
B) Left click above the first column, to select the full column.
Menu "Table"> "Autoadjust"> "Column width..."> Set some width (eg. some smaller value).
Results:
Path A changes the width only for the cell in which I click.
Path B changes the width only for the first cell of the column.
I'm very confused, could someone please point me in the right direction?
