It's worth a try and can't do much harm, since you can backup the original one / can always start a clean profile.

If not, is there some other way of sharing symbol-catalogue entries?

As far as I remember, I've been able to add all kind of changes with extensions. The way it works is still the same as it was with OOo, and I see the starter page of the wiki is still there:
http://wiki.services.openoffice.org/wiki/Extensions

And probably on the fora there will also be examples.
