I can just link a (character) style to Ctrl-Z (not something I would 
advice, since Ctrl-Z normally is Undo, but it works).

Maybe for MacOS? Not for my Ubuntu anyway.

Possibly? But if you give a precise description of what your steps are 
to assign the key bindings, maybe that helps us to help?
