Found the solution in a non-intuitive place. 
Go to Tools > Options > LibreOffice > View 
This setting is controlled by the Selection Transparency option.

Is it possible to change the color used to highlight a group of selected cells in calc? On my linux 
boxes, the difference in color between selected and unselected cells is barely discernible .
