Not quite as simple as I originally thought. I already had it set to reply in plain text.
Click on 'Reply'
Click on 'Plain Text'
Click on 'OK'
Cancel sending message
Click on 'Reply" - This time it will open in Plain text mode with proper attributions for
quoted text.
