I'm doing a chapter which has a mix of style formatting ON (Emphasis), and NOT ON (oooTextbody), for dialog names. What's the correct way to go here?

Not on. Plain text, no italics.

Standard practice in technical writing is the first mention of a dialog (or any other named item), you put the name in bold, after that the dialog name is in plain text. The name should be always be written in Title Case. These kind of rules have been the same in the many writing standards have I worked to.
