What, too late for not mentoring? ;-) If the students didn't submit an EasyHack, their proposals probably have not been considered for slot allocation, you can check in the GSoC dashboard (but let's not discuss that here). However, if a student looks promising to you but doesn't get selected for GSoC at the end there's always the possibility to mentor him/her anyway if s/he's interested in the project although the monetary incentive would be gone..
