To answer your question, when I want to launch LO from built sources, I do:
cd <LO root directory>instdir/program
.. ./ooenv (there's a space between the 2 ".")


which is actually pointless since "soffice" will do that automatically
if an "ooenv" file exists in the same directory  :)
