Reworked the Darwin section of "GNU cp" to work a little better.
--with-gnu-cp=/opt/local/bin/gcp now works and overrides the default behavior (if it exists).
Not passing --with-gnu-cp should default to "cp" for all systems except Darwin which should now 
error with "gcp" not installed, or "gcp" found and being used.

PS: If someone finds the Mac section of the how to build wiki... Please add a note that "gcp" can 
be installed via "macports" using "sudu port install coreutils"
