Prinzipiell geht das mit der von dir vorgeschlagenen DATUM-Funktion schon - nur akzeptiert sie
dummerweise keine Zellenangaben (in diesem Fall A1 statt 2019).

Könnte es sein, dass von den vorherigen Versuchen die Zellen noch als
Text formatiert sind? Probier es zunächst mal auf einem neuen, leeren
Tabellenblatt. Wenn's funktioniert, dann könnte es an dieser
Formatierung liegen. Dann müsstest Du alle Formatierungen löschen und
die Eingabe neu beginnen.
