Ich habe inzwischen herausgefunden, woran es liegt: wenn ich mit der Option
nolocks mounte, dann kann ich mit LO die Datei Problemlos öffnen,
bearbeiten und wieder speichern.

natürlich muß die Option richtig "nolock" heißen ;), also bei mir richtig:
sudo mount -o nfsvers=3,nolock 192.168.1.110:<pfad zur Freigabe> <Zielpfad>
