Instead of using the History Master extension suggested by Pedro, you can
edit your user profile directly, or use the Tools -> Options -> Advanced: 
"Expert Configuration" dialog.

The stanzas are recorded  in the org.openoffice.Office.Common.History
preferences 

Use the search bar (you land there on opening)  search for property
"PickListSize". Default value will be 25. Edit and change to 0.

And at 5.2.0 we've changed the button name on the Advanced panel to "Open
Expert Configuration" and an additional control of  "RecentDocsThumbnail",
default will be "true"  edit and change to "false"

Notes for Assistive Technology tools users:

Just checked and in  NVDA on Windows the builds are missing accessible
events for fields on the table rows. Fortunately the sequence is consistent.

1. Search  -- for entry "picklistsize" 

2. Tab -- onto the Search button

3. Tab -- into the table where NVDA will sound
"'org.openoffice.Office.Common', selected row 0, column 'Preference Name'

4. Cursor Down -- onto the History:PickListSize stanza -- where NVDA will
sound "cell row 1, column 'Preference Name'

5. Alt+E (for edit)  -- opens the value edit dialog -- and NVDA will sound
"Name dialog, edit, 25"

6. delete 25, enter text 0

7. Tab onto Help,  then Tab onto OK button

8. Enter on OK button to write the new value

9. which will close name dialog and move focus to Expert Configuration Edit
button sounded by NVDA

10. Tab onto Reset, then Tab onto OK button 

11. Enter on OK button to exit Expert Configuration

12. Restart LibreOffice to apply new setting to user configuration. The
Recent Documents list will be cleared, and StartCenter thumbnail view will
be empty.

Do the same search and edit from 5.2.0 onward to change the
RecentDocsThumbnail boolean value, and the thumbnails will not be created at
all-regardless of the picklist size.

In the startcenter, instead of a thumbnail of the page of the document you
get an icon of the document type and the filename as a label.

Unfortunately for boolean the Alt+E just toggles the true/false values. 
Keep in mind that if you need to reset things you will need to delete your
user profile and it will then rebuild with defaults on next LibreOffice
start.
